Instructions
Preheat your oven to 400°F (200°C).
Wash and scrub the sweet potatoes, then pierce them multiple times with a fork.
Arrange the sweet potatoes on a baking sheet lined with parchment paper, drizzle with olive oil, and sprinkle with salt.
Bake the sweet potatoes for 45-50 minutes until tender.
While baking, mix the shredded chicken with BBQ sauce, corn, black beans, and red onion in a bowl. Season with salt and pepper.
Remove the sweet potatoes from the oven and let cool for a few minutes.
Make a lengthwise slit on the top of each sweet potato and gently squeeze to open.
Fill each sweet potato with the BBQ chicken mixture evenly.
Sprinkle cheddar cheese on top and return to the oven for 10 minutes until cheese is melted.
Top with diced avocado and garnish with cilantro before serving.
Notes
Present the stuffed sweet potatoes on a vibrant platter and garnish with extra cilantro and lime slices for color.
