Instructions
In a medium-sized mixing bowl, add the fresh blackberries and finely chopped sage leaves. Using a muddler or the back of a spoon, gently mash the blackberries to release their juices and the fragrant oils from the sage leaves. Aim for a textured mixture with visible blackberry pieces.
Pour in the freshly squeezed lemon juice and honey/agave syrup over the muddled mixture. Stir the ingredients together until the honey/agave is fully dissolved and the mixture is well combined.
Set a fine-mesh sieve over a large pitcher and carefully strain the blackberry-sage mixture to separate the liquid from the seeds and sage leaves. Use a spatula to press the mixture, ensuring you extract as much flavorful liquid as possible.
Gradually pour the chilled sparkling water into the pitcher with the strained mixture. Gently stir the concoction with a long spoon to combine, taking care not to break the bubbles.
Prepare serving glasses by filling them with ice cubes. Pour the refreshing spritzer over the ice, allowing it to chill even more as you serve.
For an eye-catching presentation, garnish each glass with a slice of lemon and a sprig of fresh sage, elevating both the visual appeal and aromatic experience.
