Instructions
Preheat your oven to 350°F (175°C) and lightly grease a 9x13 inch (22x33 cm) baking dish with cooking spray or olive oil.
In a large mixing bowl, thoroughly combine the ground beef and ground turkey. Add the breadcrumbs, shredded cheddar cheese, milk, chopped onion, bell pepper, minced garlic, eggs, Worcestershire sauce, Italian herbs, and a pinch of salt and pepper. Use your hands or a spatula to mix until everything is evenly incorporated.
Transfer the meat mixture to the greased baking dish, spreading it out evenly. Use the back of a spoon to create a slight well in the center of the mixture, which will hold the mixed vegetables.
In a separate bowl, combine the mixed vegetables with the cream of mushroom soup, stirring until the vegetables are well-coated. Pour this mixture over the meat layer in the baking dish, ensuring it is spread out evenly.
Top the casserole with dollops of prepared mashed potatoes, spreading them across the surface. Use a fork to create swirls and peaks in the potatoes for added texture and style.
Generously sprinkle additional shredded cheese over the top of the mashed potatoes, ensuring a cheesy crust forms during baking.
Place the casserole in the preheated oven and bake for 45-50 minutes, or until the meat is no longer pink in the center and the cheese is melted and bubbling.
