Instructions
In a medium mixing bowl, combine the minced chipotle peppers, olive oil, smoked paprika, ground cumin, garlic powder, salt, and freshly cracked black pepper. Stir until all the ingredients are well blended to form a rich marinade.
Place the chicken thighs into the bowl and toss them thoroughly to ensure each piece is fully coated with the marinade. Cover the bowl with plastic wrap or a lid and let it marinate in the refrigerator for a minimum of 30 minutes, or ideally overnight to deepen the flavor.
Preheat your grill or a stovetop grill pan over medium-high heat, ensuring it is hot before adding the chicken.
Once the grill is ready, remove the chicken from the marinade, allowing any excess to drip off. Grill the chicken for approximately 5-7 minutes on each side, or until fully cooked through and the internal temperature reaches 165°F (75°C). Once done, remove the chicken from the grill and let it rest for a few minutes to retain its juices.
While the chicken is resting, place the corn tortillas on the grill and warm them for about 30 seconds on each side, or until soft and pliable. This step adds a nice toasty flavor to the tortillas.
After resting, slice the grilled chicken into thin strips to make them easier to fit into the tacos.
To assemble the tacos, take one warm tortilla and lay a few strips of the grilled chicken in the center. Top generously with diced tomatoes, chopped red onion, and slices of avocado.
Garnish each taco with a sprinkle of fresh cilantro leaves and serve immediately with lime wedges on the side, allowing each guest to squeeze fresh lime juice over their tacos just before enjoying.
