Start by placing the finely chopped dried mango, shredded coconut, rolled oats, almond butter (or peanut butter), honey (or maple syrup), vanilla extract, and sea salt into a food processor.
Blend the ingredients together using short pulses until the mixture is well combined and begins to clump together. You might need to pause occasionally to scrape down the sides of the bowl to ensure even mixing.
If you decide to include chia seeds for a nutritional boost, add them to the blended mixture and pulse a few more times until evenly incorporated.
Prepare a baking tray by lining it with parchment paper to prevent sticking.
With your hands, take small portions of the mixture and roll them into balls about 1 inch in diameter. Arrange these bite-sized energy balls on the prepared baking tray.
Once you’ve rolled all the mixture, place the tray in the refrigerator and chill for at least 30 minutes. This will help the energy bites firm up nicely.
