2wholeripe mangoes, peeled and chopped into small cubes
1cupplain Greek yogurt
½cupcoconut milk
¼cuphoney or maple syrup
1teaspoonground cardamom
1tablespoonfreshly squeezed lime juice

Instructions
Begin by placing the diced mangoes, plain Greek yogurt, coconut milk, honey or maple syrup, ground cardamom, lime juice, and a pinch of salt into a blender.
Blend on high speed for about 1-2 minutes or until the mixture reaches a smooth and creamy consistency. Taste the mixture and adjust the sweetness as desired, adding more honey or maple syrup if necessary.
Carefully pour the smooth mango mixture into popsicle molds, ensuring to leave a small gap at the top of each mold to allow for expansion during freezing.
Insert the popsicle sticks firmly into the center of each mold and place them upright in the freezer.
Allow the popsicles to freeze for a minimum of 6-8 hours, or until they are completely solid.
To remove the popsicles, run the molds under warm tap water for a few seconds to loosen them, then gently pull the popsicles out without breaking them.
Notes
For an added touch of freshness, garnish with mint leaves and a slice of lime.
