In a large mixing bowl, place the sweet potato wedges. Add the olive oil, maple syrup, ground cinnamon, freshly grated nutmeg, and a sprinkle of sea salt. Toss the wedges until evenly coated.
Prepare a baking sheet by lining it with parchment paper. Arrange the sweet potato wedges in a single layer on the sheet.
Place the baking sheet in the preheated oven and bake for 25-30 minutes, flipping the wedges halfway through.
Once done, take the baking sheet out of the oven and let the wedges cool for a few minutes.
Carefully transfer the sweet potato wedges to a serving platter and drizzle any remaining maple glaze over the top.
Sprinkle the wedges with freshly chopped parsley before serving.
