Instructions
Start by preheating your oven to 400°F (200°C). This will prepare it for roasting the garlic.
To roast the garlic, take the unpeeled cloves and wrap them tightly in aluminum foil. Drizzle a small amount of olive oil over the cloves before sealing the foil. Place the wrapped garlic in the preheated oven and roast for approximately 30-35 minutes, or until the cloves are soft and have turned a lovely caramel color. Once done, remove from the oven and allow to cool for a few minutes.
In a food processor, combine the drained chickpeas, the roasted garlic (be sure to squeeze the cloves from their skins), tahini, olive oil, lemon juice, ground cumin, and a generous pinch of sea salt.
Pulse the mixture for about 1-2 minutes until it reaches a creamy smoothness, stopping occasionally to scrape down the sides of the bowl for an even blend.
As you continue to blend, gradually add water, one tablespoon at a time, until your hummus achieves a beautifully creamy consistency that is still spreadable.
Taste your hummus and feel free to adjust the seasoning, adding more salt or lemon juice to suit your preferences.
Once the hummus has reached your desired flavor and texture, transfer it into a charming serving bowl. Create a small well in the center of the hummus with the back of a spoon. Finish by drizzling a bit of olive oil into the well and lightly sprinkling paprika over the top for a dash of color.
