Instructions
Prepare the Sauce: In a blender, combine the diced mango, chopped habanero peppers, honey, lime juice, minced garlic, soy sauce, smoked paprika, and ground cumin. Blend until you achieve a smooth and vibrant sauce. Taste and adjust seasoning if needed.
Marinate the Wings: In a large mixing bowl, place the chicken wings and season them generously with salt and pepper. Pour half of the mango habanero sauce over the wings, ensuring each wing is thoroughly coated. Set aside the remaining sauce for later use. Cover the bowl with plastic wrap and refrigerate the wings to marinate for at least 1 hour (for optimal flavor, marinate overnight if possible).
Cooking the Wings: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper for easy cleanup, and arrange the marinated wings in a single layer on the sheet, ensuring they have some space in between them.
Bake and Crisp: Bake the wings in the preheated oven for 40-45 minutes. Halfway through baking, carefully turn the wings over to promote even cooking and achieve maximum crispiness. For an extra crisp finish, switch to broil for an additional 2-3 minutes at the end, but watch them closely to avoid burning.
Coat and Serve: Once the wings are golden, crisp, and thoroughly cooked, remove them from the oven. In a large bowl, toss the wings with the reserved mango habanero sauce until they are nicely coated.
