1tablespoonfresh parsley, finely chopped for garnishing
Instructions
Begin by preheating your oven to 400°F (200°C) to ensure it's hot enough for even roasting.
In a large mixing bowl, blend together the olive oil, lemon zest, freshly squeezed lemon juice, minced garlic, sea salt, black pepper, and red pepper flakes (if desired). Stir well until all ingredients are thoroughly combined.
Carefully add the trimmed asparagus to the bowl, and gently toss them until each spear is evenly coated with the zesty lemon garlic mixture.
Line a baking sheet with parchment paper for easy cleanup, then arrange the asparagus in a single layer across the sheet, making sure not to overcrowd them for proper roasting.
Place the baking sheet in the preheated oven and roast the asparagus for approximately 15-20 minutes. The asparagus should be tender yet still crisp, with slightly caramelized edges for added flavor.
If you’re looking for a cheesy enhancement, sprinkle the grated Parmesan cheese over the asparagus during the last 5 minutes of roasting, allowing it to melt and create a deliciously savory crust.
Once done, remove the baking sheet from the oven and transfer the roasted asparagus to a serving dish, ensuring to capture any of the flavorful juices released during roasting.
Notes
Garnish with fresh parsley for added color. Pairs well with grilled chicken or fish.
